General Questions • [Software] Update a legacy BIOS boot to use UEFI?

When I initially installed, UEFI was still relatively new (at least in production) so I just disabled it and installed Grub with "legacy BIOS only".

I'm having some issues with Bookworm. In my travels I've noticed that there are firmware updates available. But I've removed Windows and 'fwupd' refuses to work with legacy BIOS, so it looks like I need to re-enable UEFI boot. However, when I do that, my system doesn't boot.
Fwupd is a relatively new thing that likely didn't exist when your Lenovo was new. Go ahead and re-enable UEFI boot. For purposes of installing the BIOS update, you won't be needing Debian to boot. You can install the BIOS update according to Lenovo instructions, then switch the BIOS setting back to legacy mode booting to return to normal Debian use after the firmware upgrade is behind you.

Because I'm a serious multibooter, I much prefer UEFI booting on hardware that offers it, but for any single OS use case, it should matter not which type of booting is employed. I suggest to not muck with what you have now, waiting to switch, if ever, until such time as you find it appropriate to install afresh, such as on a new SSD.
