This is getting more complicated then I ever imagined.
I first created a post on the OpenWRT forums, there I was told I need to add a route on the OpnSense router.
I then created a post on the OPNSense forums, there I was told it would be better to create a route on Debian.
I then created a post here and being told I need to redo part of my network.
The why I currently have it set up and working is not what I wanted, but if it works -- so great.
I have a multiport NIC in the server. I have a static IP for the 10.78.239.0/24 network (10.78.239.106) which is how it sends and receives data to and from the Internet. I also have static IP for the 192.168.107.0/24 network (192.168.107.11) with no gateway.
Can I add a host firewall rule(s) to:

- only allow SMTP traffic to 192.168.107.10 from 192.168.107.11 while all other traffic is blocked
- only allow SMTP traffic to 192.168.107.11 from 192.168.107.10 while all other traffic is blocked
