I have been using unattended-upgrades for years and years and years. The only issue I have ever had was when a bad grub update made it through a few years back. It just gets on and does it - I sometimes check toy see what's been done - but not often.
If you decide to introduce strange repositories - and indeed ubuntu repos which is not unknown - then things can go wrong.
