I already told you how to test. It happens because NVRAM is finite, so culling entries no longer in use frees up space. Not all UEFI implementations do this, but many do. At a guess Windows doesn't exhibit the behavior because it's hard-coded into the firmware. Indeed, as you may know, most OEMs take the position they don't support booting Linux or any other OS not sold with the machine.
